Setting up the Default Email User
Go to your icon in the upper right corner.

Click the icon and this comes up:
Click Settings

I thought there was a default user for the whole org, but so far, I haven't found it. Let's look at My Email Settings...

You can set up each of your Salesforce users with the same email address. See if that is a stopgap while we find the default email sender. I'm beginning to doubt this exists. I'm looking though...
